Moroccan Couscous with Dried Fruits and Nuts

After you plate it, you can drizzle with honey. It will be a little sweeter, and a little more divine!

Serves 8

Ingredients:

  • ½ cup olive oil
  • 1 small onion, finely sliced
  • ½ cup dried apricots, finely chopped
  • ¼ cup raisins, finely chopped
  • ¼ cup prunes, finely chopped
  • ½ cup boiling water
  • 2 cups low sodium chicken broth
  • Salt and pepper
  • 10 oz couscous
  • ½ cup cashews, roughly chopped
  • ½ cup almonds, slivered and toasted
  • ½ cup fresh basil, chopped

Directions:

In a small skillet, heat 1 tablespoon of olive oil and sauté the onion until golden, about 3 minutes. Set aside.

In a small bowl, add the apricots, raisins, prunes, and boiling water. Let the fruits soak for about 5 minutes. Drain the liquid into container and save it. Set the fruits aside.

In a medium sauce pan, add the chicken broth and the water that has been saved from the fruit; add salt, pepper, and 1 tablespoon of olive oil. Bring it to a boil and add the couscous. Immediately remove the pan from the heat and cover with a lid. Let it rest for 5 to 6 minutes, or until the liquid is absorbed. Fluff the couscous with a fork. Add the onion, fruits, cashews, almonds, and basil. Fold in the remaining olive oil and stir it gently. Serve it immediately.

Notes:

This side dish is divine alongside with roasted lamb, steak kabobs, or any game, meat, or pork.

Serve it with lime wedges for a citrusier flavor.
