This is the tomatoes lover pizza! Yes, I love tomatoes especially heirloom tomatoes that are so juicy and flavorful!
- All-purpose flour
- Pizza dough-freshly made or pre-made, bought frozen from your favorite pizza shop
- Olive oil
- 3 to 4 heirloom tomatoes, sliced
- 6 oz fresh mozzarella cheese, finely sliced
- ½ cup fresh basil, finely sliced
- Salt and pepper
- Balsamic vinegar
Lightly flour a preparation surface and hands. Shape the pizza dough into a round of about 14-inch. Brush the dough surface with olive oil.
Spray the grill rack with olive oil. Light a grill to medium high and let it heat for about 5 to 10 minutes. Grill pizza dough for about 2 minutes on each side. With the help of a large spatula, remove the dough from grill and top it with the sliced tomatoes and sliced mozzarella, overlapping with each other, but forming one single layer. Transfer the pizza to the grill. Grill the pizza for about 8 to 10 minutes, or until the cheese is melted and the dough is cooked through and crispy. Watch the bottom of pizza closely, because if it starts to burn you should transfer it to an ovenproof shallow pan and keep grilling it until done.
Remove the pizza from the grill. Top it with the basil and season with salt and pepper. Drizzle with balsamic vinegar and more olive oil. Serve it immediately with a glass of Chianti.

You can also make this pizza in the oven. It will take a little longer to cook but it will taste great too! The reason I like to make pizza in the grill is because I love the smoked flavor that only the grill can add to any food!
Also, for extra flavor I used olive oil infused with herbs. I usually go for the traditional olive oil, but I decided to try something different this time and it was great! Well, I guess anything mixed with extra virgin olive oil tastes great…
