This is a low-carb dish, but being low-carb is not the main purpose of this recipe. It's main purpose is simply to be delicious! So feel free to use the steak sauce over diferent bases like pasta or rice. You can also use the spaghetti squash with other sauces, like white sauce with chicken. The idea here is to experiment with a healthy and delicious ingredient.

Serves 6

Ingredients:

  • 1 large spaghetti squash
  • 1.5 pounds of steak (I used top sirloin, but you can use any other good cut) cut in cubes
  • 1 medium onion sliced
  • 1/2 cup of brandy or cognac
  • 3 tablespoons of olive oil
  • 1 package of portabella mushrooms wiped and sliced
  • 3 rosemary sprigs, finely chopped
  • 1 teaspoon of a good quality chicken base
  • 1 tablespoon of soy sauce
  • 1/2 cup of frozen sweet peas
  • 1 can of Media Crema (table cream) or 3/4 cup of heavy cream
  • 2 tablespoons of fresh basil
  • 2 tablespoons of chopped green onions
  • Salt and pepper to taste

Directions:

With a sharp knife, carefully make several cuts all around the spaghetti squash. Microwave it for 15 minutes on high. Let it stand for about 1 hour to cool down. Cut it across and discard all the seeds. Remove the "fake spaghetti" with the help of a large spoon, and put it inside an ovenproof dish. Set aside.

In a large skillet, heat up the olive oil on high. When it is really hot, throw the steak and onions into the skillet and sear (do not stir or move the pan for about 1-2 minutes). Pour the brandy over the ingredients and angle the pan so it flames (if it doesn't flame, don't get disappointed; it will taste good anyway). Add the mushrooms and stir. Add the rosemary, chicken base, and soy sauce. Cook for about 3 minutes stirring occasionally. Add the frozen sweet peas and cook for another 2 minutes. Turn off the heat and add the Media Crema (table cream) or heavy cream. Taste the sauce and add more salt and pepper if necessary. Stir in the fresh basil and green onions.

Pour the sauce over the spaghetti squash (our fake spaghetti) and place in a preheated oven (350 degrees) for about 10 minutes so it incorporates.

Serve with parmesan cheese on the side.

Also, if you are not familiar with Media Crema, this ingredient is similar to heavy cream, but thicker. You can find it in the Latin section of your grocery store.
