Easy Penne with Mustard-Marsala Tenderloin

If you are looking for a quick and easy meal to impress someone special, this is what you have been looking for!

In a large skillet, heat the olive oil until shimmering and add the onions. Cook for about 7 minutes, stirring occasionally, until they are golden brown. Add the garlic, thyme and tenderloin and sear for about 1 minute. Stir in the marsala wine, deglazing the pan. Add the beef broth and the Dijon mustard and stir until it is all incorporated. Add the half and half and season with salt and pepper. Cook it for about 5 minutes, or until the sauce starts to thicken. Remove from heat and add the scallions, basil, and olives.

Cook the penne in a large pan of boiling water for about 11 minutes. Drain and fold into the sauce. Serve it immediately with parmesan cheese and a glass of Merlot.

Notes:

I had to add the word “Easy” on the title of this recipe because it is the best way to describe it! It takes no time to prepare it and the process is very simple; but the best part is how flavorful and elegant it turns out. I have to say that this is the perfect dish to impress your boyfriend (or girlfriend!) if you are not super skilled in the kitchen. I can guarantee he will fall for this one ;)

The combination of Dijon mustard, half & half (or cream) and steak is a classic. In this pasta sauce this classic combination gets a touch of sweetness from the Marsala wine; and a fresh twist from the herbs. The result is great!

*You can substitute the tenderloin (an expensive cut of meat) for something less expensive like t-bone or top-sirloin – just make sure you trim all the visible fat.

*Marsala wine is the main ingredient in the classic "Chicken Marsala". If you want to use up the bottle of Marsala wine you have purchased to make this dish, you should also check my "Chicken Marsala with Cream, Garlic and Herbs" recipe. It is a fantastic dish!
