Hearts-of-Palm, Mushrooms, and Fresh Mozzarella Salad

This salad is perfect with a grilled steak during summer time!  Enjoy!

Serves 4



In a medium skillet, heat up the oil.  Sauté the mushrooms and garlic for about 2 or 3 minutes, or until the garlic is fragrant and the mushrooms are tender. 

Remove the mushrooms from the skillet, and transfer the oil to a medium mixing bowl. Let it cool. Stirring vigorously, add the mustard, honey, and balsamic vinegar to the bowl. Set aside.

Assemble the mixed greens on the bottom of a large plate. Place the fresh mozzarella, hearts-of-palm and mushrooms on top of the greens.  Drizzle the dressing over the salad and season with salt and pepper. Serve with a crispy, white wine such as Pinot Grigio.


I like to make this salad with mixed baby lettuce, but it also tastes great with spinach or arugula.
