Red pepper jelly gives a touch of sweetness and spicy to this simple salad recipe. Mango white balsamic gives a tart bite to the dressing, which can be used with other combinations of greens. Try this light and flavorful salad today!
- 2 tablespoons red pepper jelly
- 1 tablespoons mango white balsamic vinegar
- ¼ cup Herbs the Provence extra virgin olive oil
- 2 cups arugula
- 10 cherry tomatoes, halved
- ¼ cup roasted bell peppers, chopped
- 1 avocado, sliced
- 2 tablespoons goat cheese
- Salt and freshly ground black pepper
In a medium bowl, whisk the red pepper jelly, mango flavored balsamic and Herbs the Provence olive oil until combination emulsifies. Set aside.
Place arugula in individual salad plates and top with cherry tomatoes, roasted red peppers, avocado and goat cheese. Season with salt and pepper. Drizzle salad dressing and serve it immediately.
Red pepper jelly can be found at gourmet stores, although it is an item that has becoming more popular so it might be found at large grocery stores.
Mango Balsamic is also a gourmet item. I purchased mine at “The Olive Twist” in Fort Wayne, Indiana, and it is an amazing product! Replace for good quality balsamic vinegar if you cannot find the white mango close to you.
Herbs de Provence infused olive oil can be found at The Olive Twist, in Fort Wayne, Indiana. If cannot find something similar close to where you live, I recommend you to make your own. Herbs de Provence is the combination dried herbs: savory, fennel, basil and thyme. Add the herbs to extra virgin olive oil and whisk it vigorously. Using a pestle and mortar will blend flavors together better, but whisking it will also work.
