Tortellini Soup with Caprese Sandwich

Soup and sandwich combo never tasted so good! This fantastic pair is ALMOST vegetarian, but there is so much flavor in this meal that meat lovers will not even care... Enjoy one of my easy-to-make hearty and fresh favorite combinations!

Tortellini Soup

Makes 8 cups

Ingredients:

Directions:

In a large pot, heat the olive oil over medium high heat and cook the onions for about 3 minutes, or until they are translucent; add the carrots and garlic and cook for about 7 minutes, stirring occasionally. Add the chicken broth and bring it to a boil. Add the spinach and cook for 3 minutes; season with salt and pepper. Add the cheese tortellini and cook until al dente, about 3 to 4 minutes. Remove from heat and serve with the “Caprese Sandwich” (recipe below.)


Caprese Sandwich

Serves 4

Ingredients:

Directions:

Preheat oven to 400 degrees F for 10 minutes. Place tomatoes in a medium baking dish and cover with ½ of the olive oil; season with salt and pepper and bake for about 15 minutes. Remove from oven and let it cool. Keep oven turned on.
Drizzle each baguette with the remaining olive oil and the balsamic vinegar; spread the fresh mozzarella slices and top with the tomato. Bake for 5 minutes, or until the cheese melts. Add 2 basil leaves to each sandwich and serve it immediately with extra olive oil and balsamic vinegar on the side.
