Caprese Bruschetta with Pine Nuts

The ingredients in this recipe are one of my favorite combinations of flavors ever: fresh tomatoes, fresh mozzarella, fresh basil, pine nuts, and garlic.

Serves 6

Ingredients:

  • ½ pound loaf ciabatta bread (or any thick crust, rustic style bread) trimmed and cut into 6 or 7 slices (½-inch thick)
  • ¼ cup olive oil, plus more for drizzling
  • 1 garlic clove, halved
  • ¼ cup pine nuts
  • 12 oz cherry tomatoes, quartered
  • 8 oz fresh mozzarella, roughly chopped
  • ½ cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • Salt and pepper

Directions:

For the toasts: Put an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Arrange the bread slices in a single layer on the baking sheet and drizzle with olive oil. Bake until light golden, about 10 minutes. Cool for 2 minutes. Rub the warm toasts with the cut side of the garlic. Set aside.

In a medium size skillet sauté the pine nuts until golden, about 4 minutes. Set aside.

In a medium mixing bowl, add the cherry tomatoes, fresh mozzarella, basil, and balsamic vinegar. Add the pine nuts. Season with salt and pepper.

Using tongs, arrange the tomatoes mixture on top of the toasts.

Serving option 1:

Serve it immediately.

Serving option 2:

Bake the toasts for 5 to 7 minutes, in a 350 F degree oven. Let it cool for 2 minutes. Serve it immediately.

Notes:

The ingredients in this recipe are one of my favorite combinations of flavors ever: fresh tomatoes, fresh mozzarella, fresh basil, pine nuts, and garlic. I love this so much that my favorite way to serve it at room temperature, without baking, because it tastes fresher. Now my husband loves it even more after it is baked. So try both options and see which one you like best.
