The cream cheese adds richness to this shrimp dish. I used Catupiry (the Brazilian style cream cheese) and I made this recipe while spending time with my family in the beach town of Camboriú, Brazil.
- 1 ½ pounds new potatoes or roughly chopped russet potatoes
- 3 tablespoons fresh rosemary
- 4 garlic gloves, roughly crushed
- ¼ cup extra virgin olive oil, plus 2 more tablespoons
- Salt and freshly ground black pepper
- 1 small onion, chopped
- 2 ½ pounds tomatoes, seeded and chopped
- 1 tablespoon sugar
- ½ cup basil, chopped
- 2 ½ pounds large shrimp, cleaned and deveined
- ¼ cup dry white wine
- 8 oz Catupiry, or 4 oz cream cheese and 4 oz brie combined
- 1 tablespoon flat leaf parsley, chopped
- 1 tablespoon scallions, chopped
Preheat oven to 350 degrees F. In a large ovenproof deep dish, combine the potatoes, rosemary, garlic, and ¼ cup olive oil. Season with salt and pepper and roast in the oven until potatoes are soft, about 25 minutes. Set aside, keeping it warm.
In a large sauce pan, heat one tablespoon olive oil and cook the onions until translucent, 4 minutes. Add tomatoes and sugar and cook in medium low heat for about 20 minutes. Remove from heat, season with salt and pepper and fold in basil. Set aside.
In a large skillet, heat the remaining olive oil until smoking. Add the shrimp and sauté until they start to curl and turn pink, 2 minutes. Add the wine and remove from heat. Mix the shrimp and juices from the pan to the tomato sauce.
Cover roasted potatoes with tomato-shrimp sauce. Top with Caturpiry, or cream cheese-brie combination. Broil until cheeses melt on top. Remove from oven and sprinkle with parsley and scallions. Serve it immediately with a glass of white wine and a side of jasmine rice.
Catupiry is Brazilian style cream cheese and, although it is exported from Brazil to the USA, its distribution is primarily limited to markets in Brazilian neighborhoods and communities. If you cannot find Catupiry close to where you live you can substitute for a combination of brie and regular cream cheese.
This shrimp casserole is great for parties too.
In Brail, Catupiry is often combined with seafood and it is really delicious!
I think this entree goes great with Chardonnay.
