Salmon with Passion Fruit Sauce

This recipe is fresh and healthy! The combination of salmon and passion fruit can be very unusual in the US but is very well known in Brazil.

Directions:

Preheat oven to 400 degrees F. Season salmon fillets with salt, pepper and 1 tablespoon of canola oil, rubbing fillets on both sides. Bake for 15 minutes or until flakes easily with a fork. 

Meanwhile, heat the butter and the remaining canola oil in a medium skillet. Add the onion and cook on medium-high heat until translucent, about 4 minutes. Stir the brown sugar and the passion fruit pulp, cook for another minute or two. Fold in the crème fraîche and remove from heat.

Mix mint, scallions, and cilantro in a bowl.

Place salmon fillets on individual plates and add 2 or 3 tablespoons of passion fruit sauce. Top with the fresh herbs mix and serve it immediately with a side of mixed grains rice.

Notes:

*Passion fruit pulp can be found at the frozen section of main grocery stores, or at the frozen section of international or Latin grocery stores. To make it from scratch: add the pulp of 2 passion fruits and ½ cup water to  blender and blend for 20 seconds. Strain and add to the sauce.

For a convection oven, bake salmon fillets at 375 degrees F for 13 minutes or until it flakes easily with a fork.
