I had Clericot while I was in Punta del Leste, Uruguay, in February 2011. It’s the drink of choice in Punta.
Serves 6
Ingredients:
- 1 bottle of sparkling wine (Brut)
- 1 small apple, diced with skin on
- 1 peeled sliced orange
- 2 small peaches, diced and peeled
- 1/3 pineapple, diced and peeled
- 5 strawberries cut into quarts
- 5 cherries, cut into quarts and seeds removed (optional)
- 4 tablespoons of sugar
Directions:
Prepare all the fruit in a pitcher; add sugar, and enough sparkling wine to cover the fruit. Let the fruit absorb the alcohol for a couple of hours in the fridge. When ready to serve, pour the remaining sparkling wine and add about 3 cups of ice. Add more sugar if you prefer it sweeter.

This drink is so refreshing and it’s perfect for a day at the pool; or for an afternoon at the beach. I had Clericot while I was in Punta del Leste, Uruguay, in February 2011. It’s the drink of choice in Punta. Every bar or restaurant you go, you see tons of people ordering it. Well, I had to order it too! And of course I fell in love with it!
Originally, Clericot is prepared with white wine. My version uses sparkling wine. I like the bubbles! So why don’t you try making both versions and judge it for yourself? I would love to know which one you like better!
